Simple, dairy-free chocolate truffles recipe? Yes please! Excellent party dessert or to share with your loved ones, this one is a keeper!
This recipe makes about 45 truffles. Preparation takes roughly 30 minutes but they must be left to set for 4+ hours.
300 g dairy-free dark chocolate
2 tbsp cocoa powder
240 ml light coconut milk
3 tbsp coconut oil
½-1 C dry coconut
½-1 C mixed nuts
1 tsp vanilla extract
First you will want to chop the chocolate into tiny pieces and add the pieces into a bowl with the coconut oil. It’s important to use coconut oil because unlike many other oils it solidifies when cool, which will hold your truffles together.
Put the coconut milk into a small pan and stir it gently over low heat. When it’s heated through you can add it to the chocolate/coconut oil mixture in the bowl and blend them together slowly. Don’t over-mix or mix too quickly.
After the above has been mixed together, stir in the vanilla extract. Cover the bowl with clear plastic wrap and set in the fridge for 4 or more hours.
When the truffle mixture in the fridge has almost settled, toast the coconut over medium heat for a couple minutes until it is slightly golden. Place the coconut on a plate. Use the same pan to roast the mixed nuts over medium heat, again for a couple minutes or until they turn a slight goldish colour. Let the mixed nuts cool a bit before chopping them into fine pieces and laying them out on a second plate (not the one that has the coconut). On a third plate spread out the cocoa powder in order to make an “assembly line” of finishing ingredients.
Scoop out 1tsp-sized balls of the truffle mixture and use your hands to roll it to a nice, round shape. Roll each truffle in either the coconut, mixed nuts, or cocoa powder. Or why not try a little of all three, if you’re up for it?
Place the finished truffles on a tray and place the whole tray in the fridge. After about 10 minutes, the truffles should be firm enough to serve and enjoy.
